Vegan Mushroom Burgers
These burgers are perfect to make right now because most of these ingredients are things that you already have in your home!!!
Makes 4 servings
1 ½ cups portobella mushrooms, chopped
1 ½ cups onion, chopped
1 can kidney beans
1 tbl soy sauce or liquid aminos
1 cup breadcrumbs ¼ cup nutritional yeast (or grated parmesan cheese)
2 tbl olive oil
1.) Cook chopped mushrooms, onions & soy sauce for 5 minutes on a hot skillet.
2.) Add kidney beans into mushroom & onion mixture and mash with a fork or combine in a food processor.
3.) Add in bread crumbs & nutritional yeast and mix until incorporated well.
4.) Form patties
5.) Cook patties on medium heat in olive oil until browned on both sides.
Top burgers with you favorite toppings like lettuce tomato, avocado slices, spinach & cheese.
Eat with bread, wrap on a bed of lettuce or with sweet potato slices!!
