Sweet Potato Hash Browns
Serving Size: 2
Ingredients:
2 Sweet Potatoes, Cleaned and Dried
1 tsp Salt 2 tbl Olive Oil 1⁄2 Onion

Directions:
1. Using a cheese grater, shred potatoes. Or you can use a food processor if you have the shredding disk attachment.
2. With a paper towel, remove any liquid from potatoes. Dice onion.
3. Flavor with salt and heat oil in a skillet.
4.Pour the potatoes and onions evenly into the pan.
5.Flip when golden brown on one side. They are done when both sides are crispy.
